I wanted to change it up a bit for breakfast this morning, plus I needed to use some avocados before they turned into meshy monsters. This was so yummy and made my house smell divine. Jason was a happy hubby. This little dish is very simple and actually quite fun.
First, I cut an avocado and removed the pit. Then, I cracked an egg in the middle of each avocado. I totally should have made the middle a little bit deeper with a spoon. I will next time to make room for the egg and prevent the overflow of egg whites. Next, I convection baked it for 20 minutes on 425° in my cast iron skillet. I finished it off by adding a little salt and peppa (while singing Push it Real Good) and voila you have an Egg-O-Cado!
The warm avocado mixed with the egg is perfection in each and every bite! I hope you enjoy as much as we did! It is simple, quick and oh so delicious! Next time I might add in a little fresh cilantro and sliced tomatoes. Let me know how you do!
